Job Description
– Prepare and cook a range of high-end Japanese dishes (e.g., Curry, Gyudon, Lunch set, Tempura, Yakitori, Udon, Soba etc.).
– Ensure all dishes meet the restaurant’s stringent standards for taste, quality, freshness, and artistic presentation.
– Maintain consistency in food preparation and portion control.
– Collaborate with the Head Chef/Manager on menu planning and development, incorporating seasonal ingredients and innovative ideas while respecting traditional principles.
– Oversee daily kitchen operations, including food preparation, and cooking stations.
– Manage and mentor junior kitchen staff, fostering a positive and productive work environment.
– Ensure strict adherence to all food safety, hygiene, and sanitation standards.
– Communicate effectively with suppliers regarding ingredient quality and availability.
Job Requirement
– Proven experience (typically 5+ years) as a Chef or Senior Cook in a Japanese restaurant.
– Deep understanding and mastery of traditional Japanese cooking techniques and tastes.
– Exceptional knife skills and precision in food preparation.
– Strong knowledge of various Japanese ingredients, their seasonality, and sourcing.
– Ability to work under pressure in a fast-paced, high-volume environment.
– Able to use English at least basic to good level (most of kitchen staff are Cambodian)
– Able to work from morning until night time as required (with a break time).
Priority
– Any nationalities acceptable
– Experience in food and beverage industry in Japan
– Japanese, Chinese, or other additional skill is highly welcome
– Working experience with Japanese and in a high-end Japanese restaurant
– Over 10 years of Japanese dishes cooking experience
– Able to work in PPSEZ for a long term, especially living near there.
